Can Pregnant Women Eat Olive Gardens Toscano Zuppa

One of my all-time favorite soups is Zuppa Toscana. I first had the soup at Olive Garden and immediately fell in love. During my last pregnancy, my hubby's cousin (who was also pregnant) and I would go to OG and eat as much soup and salad as humanly possible, well for a pregnant gal, which is a lot.
I started making this soup at home and it has been a huge hit since the very first time. I have made this into a very healthy version with ground turkey and non-fat milk but we love the original version with all the delicious fat. I also omit the chili flakes for the kids but I add it to my bowl once it is served. I have to make homemade bread with any soup and will post that recipe soon.
There are tons of recipes for this soup online but I have tweaked it to my families liking. Feel free to do the same!

The Ingredients:
Half a bag or one bunch of Kale
2 packages of Italian Sausage
Small white onion, diced
4 cloves of garlic, crushed
Small bag of red potatoes
Box or 2 cans of chicken stock
Small container of Heavy Cream
Olive oil
Seasonings: salt, pepper, parsley, basil
Chili flakes or hot sauce
Start by adding the diced onion with a tablespoon of Olive oil in the pot
After a couple of minutes, add the crushed garlic
Once that has a chance to brown, add the Italian sausage and cook thoroughly 10-15 minutes. Allow the meat to get as dark as you will want it since it will not continue to cook much after this point. My hubby likes his pork dark so I let it brown a lot.
When your meat is as dark as you want it, add in your diced potatoes and let it cook for a few minutes
I then add all of my seasonings. I throw in salt, pepper, garlic/onion powder, parsley, and basil
Stir everything up until it is all incorporated
Now it is time to add your chicken stock and I usually add half water too but it depends on how much liquid you like your soups to have
Time for the Kale! Our neighborhood store only had bagged kale, so I broke off the leaves from the stems and added them to my pot. I personally do not like the stems but you can add them if you want.

Stir it all up and put the lid on. Let this cook for at least 30 minutes.
See? You put the lid on.
Check the soup about 30 minutes and make sure to give it a real good stir
Once everything looks cooked and your kitchen smells amazing, then your soup is almost ready!
Add the cream, I put about half of a small container of heavy cream and cook for just a couple more minutes
Now, serve that glorious soup up!
Lasts great in the fridge or freeze in individual containers for lunches later on.
I add chili flakes to my bowl and my hubby prefers Catalina hot sauce. Serve with warm bread and enjoy!!
